Structured finance products are Wall Street creations where they take pools of different kinds of investments and then structure them into and entirely new investment with different properties and different characteristics. So you may take something that is a very typical investment such as an investment into a mutual fund and Wall Street will engineer it into an investment in a fund that has different characteristics where it may have twice the risk or three times the risk as opposed to just the normal risk in the investment.
